Simon's Rustic Rye Bread

It took me almost 3 1/2 years to perfect this rye bread, modelled after a rye bread that I enjoyed at Simon's Deli in Winnipeg some 30 years ago. It contains RH Best for Bread white flour, rye flour, yeast, water, sea salt and caraway seeds. No sugar!! It is more like an Artisan bread, thick crust and the texture is "chewy"!! So good!
